These muffins are great for breakfast or as a pre-workout snack. They're easily digestible, hydrating, filled with potassium, healthy fats, carbs, antioxidants, and B-viatmins for energy! I got this one from women running magazine March 2016.  =) Let me know how they turn out y'all!

 

Makes 24 Muffins

Ingredients:

  • 3 1/2 cups old-fashioned oats (divided) and extra for topping
  • 1/2 cup chia seeds
  • 1/4 cup maca powder
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 3 bananas (very ripe if possible; frozen can be used, but let them thaw)
  • 2 cups unsweetened almond milk (or a combination of almond milk and orange juice)
  • 1/2 cup unsweetened applesauce
  • 2 cups fresh blueberries

Directions:

  1. Preheat oven to 350 degrees.
  2. Combine 2 1/2 cups oats, chia seeds, maca powder, baking powder, and cinnamon in a food processor. Pulse it for approximately 1 minutes until it resembles flour.
  3. Add bananas and pulse for another minutes.
  4. Add almond milk and applesauce, pulse again until combined fully.
  5. Transfer mixture to a bowl and fold in berres and additional 1 cup oats.
  6. Spray muffin pans with non-stick spray.
  7. Using ice cream scooper, scoop batter into pan.
  8. Sprinkle with oatmeal.
  9. Bake for around 35 minutes, until the center is fully cooked.
  10. Enjoy!

You can freeze these and have them as a grab and go if you wish! Warm before serving!
